Flourless peanut butter cookies.
1 cup sugar
1 cup creamy peanut butter
1 egg

Scoop out by rounded tablespoon onto a cookie sheet.
Flatten with a fork.
Bake at 350 11-14 minutes until done.

I do all the cooking at my house so I may post a few. Here is one of my favorite comfort foods.

Broccoli cornbread casserole

Preheat oven to 400
Mix the following
- 1 stick of melted butter
- 2 boxes of jiffy cornbread mix
- 4 eggs
- 2 cups of cottage cheese
- 3-4 cups of chopped broccoli
- 1 teaspoon of salt
- 1 small chopped onion (optional)

Cook for 40 minutes in large greased casserole dish

Along similar lines...

Sloppy Joe cornbread casserole
- Preheat oven to 350
- Brown 1lb of ground beef
- Mix in 1 can of sloppy joe and simmer for 2-3 minutes
- Pour in a casserole dish
- Top with cheddar cheese
- In a separate bowl mix jiffy corn bread mix, 1 egg and 1/3 cup milk (or cream corn instead of milk)
- Pour cornbread mix on top
- Bake for 35 minutes until golden brown

Elephant stew

1 elephant cut into bite size pieces
2 rabbits
100 gallons beef stock
500 lbs mixed potatoes, onions carrots

Brown elephant, add to broth and simmer in stock for a week. Add veggies and cook till tender.  Add rabbits if there's not enough elephant but be aware that some folks don't like hare in their stew

Roast Pork Shoulder

This is one of my go-to recipes when I want something special or for a larger group.

  • 1 6 - 9 lb pork shoulder bone in
  • 1/3 cup brown sugar
  • 1/3 cup kosher salt

  • Cut cross-hatch pattern in the fat cap of the roast
  • Mix the salt and brown sugar, then rub the mixture over the roast.
  • Cover the roast tightly with cling wrap or place in a large ziploc bag and refrigerate for 12-24 hrs
  • Preheat the oven to 325 F
  • Place the roast on roasting rack in a roasting pan. 
  • Add ~1 quart of water to the pan (roast shouldn't be sitting in the water)
  • Roast for 6 - 7 hours, basting every 2 hrs. Add water as necessary. 
  • The roast is done when the internal temperature is > 190 F.  the meat will be very tender; the bone will pull away from the meat with little effort.
  • Let the roast rest, covered, while you make the sauce.  Save the liquid from the roasting pan.

Peach Sauce
  • 10 oz of sliced peaches, fresh or frozen
  • 4 sprigs of thyme
  • 1/2 cup granulated sugar
  • 2 cups dry white wine
  • 1/4 cup rice vinear
  • 1/4 cup defatted juice from the roasting pan

Simmer the sauce ingredients for about 30 min or until reduced to 2 cups

I think it would be easy to create an apple-based sauce, but I haven't tried that yet.

Over the past two years I have really gotten into smoking large pieces of meat. Brisket is naturally a favorite. My cook usually goes about 14-16 hours. When I get the internal temp to 160 I wrap in the pink butcher paper for the rest of the cook until internal temp gets to 203-ish. That's likely basic info for most folks. However, the rub is where the magic happens  O0

Mrs. ArmyVet came up with this:

2 cups brown sugar
3 tbsp cayenne pepper
3 tbsp onion powder
3 tbsp garlic powder
3 tbsp paprika

I use yellow mustard as the binder. The rub has a little bit of spice to it and makes a nice bark.
Over time, I have replaced the brown sugar with turbinado (raw cane sugar). Brown sugar that you find in the baking aisle usually has molasses added. If you premix the rub you will find that the brown sugar will get really sticky due to the molasses and it will not shake out of the container (clumping and small rocks of rub). The turbinado does not have this feature.

Since I started using this rub, we have tried with grilled chicken and spatchcocked whole chickens in the smoker and it is just as good on chicken.
The difference between a novice and a master: the novice does it until they get it right. The master does it until they can't get it wrong.

Carol Burnett's Bread & Butter Pickled Onions & Cucumbers. My mother Carol Burnett, not the comedienne.

Bread & Butter Pickled Onions & Cucumbers

Equal amounts sliced Onions & Cucumbers
4 Cups Vinegar
5 Cups Sugar
1-1/2 tsp Tumeric
2 Tbsp Mustard Seed
1/2 tsp Ground Cloves
1 tsp Celery Seed

Heat until almost boiling and sugar dissolves.
Pour over cucumbers and onions.
Brine can be used a 2nd time, but probably not a 3rd.

My mom's cream cheese cinnamon rolls -

She made them for special occasions like Easter and Christmas.  I make them for Appleseed family get togethers like our recent KD IBC.  Don't reheat them for too long (like I did).  They get crunchy, hard, and gross.

Ingredients-
2 rolls of Pillsbury Grands! Flaky Layers Refrigerated Biscuits (Store bought biscuits - the horror!)
1 8 oz cream cheese
3/4ish stick of melted butter
Cinnamon sugar - I'm guessing about 1 to 1 1/2 cups tops

Flatten out the biscuits
Cut cream cheese into 16 pieces, roll into balls
Dip a piece of cream cheese in the melted butter and then roll in cinnamon sugar
Wrap the cream cheese/cinnamon sugar in a biscuit and cinch the biscuit closed
Dip the biscuit (with the stuff inside) in butter and then roll in cinnamon sugar
Put in greased/sprayed muffin pan, cinched side down
Put a cookie sheet under the muffin pan unless you like cleaning burnt butter out of your oven.

Place in oven at 350 for at least 20 minutes or until they're cooked through. Cream cheese will be HOT.
Easy to make ahead of time and reheat.  10-15 seconds each in the microwave or about 10-15 minutes in the oven for the lot of them.

Refrigerator Pickles - deli dill style - no canning

You'll need -
1 qt jar with a screw-on lid (you're not canning these)
2-3 pickling cucumbers or as many as will fit in the jar
5 sprigs of fresh dill (1 Tbsp dry)
4 cloves of garlic (you could add less, but why? #) )
3 Tbsp white vinegar
1/2 - 1 Tbsp kosher or canning salt
water to top off jar
20ish peppercorns

Combine all ingredients but the pickles and water in the jar.  Swish it around to blend.
Cut the pickles however you like
Add pickles to the jar
Top off with water
Screw on lid tight and shake to mix

Put on counter for 12 hours - sometimes I shake it a couple times
Flip and leave on counter upside down for 12 more hours - sometimes I shake it a couple times

Eat!  Store extra in the fridge.  If they make it to the fridge, they last a month.  You can add more pickles to the brine as needed.  Top off with a little more vinegar and mostly water as needed.  This is the first year I've been an empty-nester and the first year I was able to actually can pickles.  My kids and their friends devoured these things (me too).

Really quite easy and it turned out REALLY well.
Except that I can make it more quickly and less expensively, I would GLADLY pay for this in a restaurant.
