The way I understand it, if someone shoots Rifleman, they must attend a second Appleseed before they may be asked to take a hat.  Yes?  If so, can they attend Sunday only for the second shoot?  Or must they attend both days?

You are wearing a Blue hat right? If so I would think any shoot you worked would count for your second shoot.

The way I understand it is that if you attend 2 separate Appleseeds. It does not require that you attend both days if it happens to be a 2 day shoot. Is this for you or someone else? I am sure you have Been to more than 2 Appleseeds.

Not for me.  My place is Apple Core plus Adaptive Appleseed.  I'm asking for my 15 yo son.  I'm praying he will go with me this Sunday to Carrollton.

The rule is 2 Appleseeds. Now, there also is a provision for a Master Instructor (and only an MI may grant waivers) being able to waive the second Appleseed. That waiver isn't always a given, but, is there for those times that warrant it. In the case of Kentucky, the MI to approach is DonD.

The second one being Sunday only is no problem.
