If I want to pick up some gift certificates, but I don't know who the end users will be, what's the best way to handle that?

Correct. You can put anything there. Prob ought to mention that on the page to buy them.

For the name & age on the gift certificates if you do not know who you will be giving them to just put 'Unknown' for the name and for the age put 44 for age for adults and 10 for the youth tickets. The name & age are not important. When whoever receives the certificates registers for an event that is when they can put their real name and age.
Of course for the buyer information you will need to put your information in order to purchase the certificates.

I ended up ordering them. When I did, for the age I put either youth or adult depending on which was which. For the name, I inserted a generic name for the raffle like give away I'm doing.
